I’d strongly recommend listening to Dr. Paul Saladino’s podcasts, especially about cardiovascular disease. Many have been running this exact experiment alongside detailed bloodwork. It’s very common for arterial calcification to be reduced, even when blood cholesterol (which is not bad on its own) to be increased.

Also, I crave carbs once a week tops if I’m honest. I craved them far more when I ate them regularly. Personally, I believe we are generally so far removed from the lower carbohydrate, no grains, unprocessed diets of our ancestors that we don’t have a clue what our cravings are supposed to feel like. That said, strong reductions in carb cravings are common on carnivore.

Lastly, you can eat some carbs on carnivore, and it seems to be helpful on occasion. As long as your blood sugar metabolism is healthy and you aren’t insulin resistant, somewhat regular carbs in the form of honey, or in the case of a carnivore-ish diet, fermented plants, is useful.

There is nuance. I don’t think the best diet for humans shuns meat and promotes carbohydrate though.

I don’t think meat has been well-linked to negative health outcomes. Furthermore, we typically eat meat that likely contains toxins (glyphosate) and we don’t include organ meats.

Even so, I still don’t believe the data supporting veganism is compelling. Very little is based on interventional study. Most is survey based and the small trends could easily be a result of confirmation bias or healthy user bias.

All that’s just me saying, yes, please keep an eye on my experiment. It should be interesting for all.
